What you need: * 100g packet petite vanilla flavoured meringues * 10 pink marshmallows * 2 tablespoons multicoloured sprinkles What to do: 1. Count out 24 meringues. 2. Place marshmallows in a small microwave-safe heatproof bowl. Microwave marshmallows on high (100 per cent) for 20 seconds or until marshmallows double in size and soften. Stir until smooth. 3. Spoon 1 heaped teaspoon of melted marshmallow onto a meringue and sandwich together with another. 4. Place sprinkles on a small plate. Gently roll the kisses in sprinkles until the marshmallow centre is coated. Place the kisses on a tray lined with baking paper for about 30 minutes to allow the marshmallow to set. Jiggly jelly custard tarts What you need: * 12 sweet pastry cases * 1 1/2 cups smooth and creamy vanilla custard * 85g packet raspberry flavoured jelly crystals * Strawberries, to decorate What to do: 1. Place custard in a small saucepan. Stir over medium heat until hot, not boiling. Add jelly crystals and stir over a low heat for about three minutes or until jelly crystals have dissolved. Remove from the heat and set aside to cool for 20 minutes. 2. Pour custard filling into a pouring jug, and pour into pastry cases. 3. Refrigerate overnight or until filling has set. Just before serving, arrange sliced strawberries prettily over the top of the tarts! Chicken and cucumber sandwiches What you need: * 10 slices white sandwich bread * 1 large Lebanese cucumber * 1/3 cup mayonnaise * 100g shaved cooked chicken breast * 1/2 bunch chives, finely chopped What to do: 1. Using a vegetable peeler, cut thin strips of cucumber by running a peeler from one end of the cucumber to the other, until you come to the seeds in the middle. 2. Spread mayonnaise over one side of each slice of bread. Top with cucumber strips and chicken. Top with remaining slices of bread. 3. Get mum or dad to help you trim the crusts from the sandwiches using a serrated knife. Cut each sandwich into three fingers. 4. Spread a small amount of extra mayonnaise on one long side of each finger and coat in chives. |
